IR 64 rice is a premier, high-yield, non-aromatic long-grain non-basmati rice variety that acts as the backbone of the global bulk grain trade. Developed by the International Rice Research Institute (IRRI), it is widely referred to as a "mega-variety" due to its disease resistance, high milling recovery, and exceptional affordability. It serves as a major food security staple and is heavily exported out of India to markets across Africa, Southeast Asia, and the Gulf countries.
Physical and Chemical Characteristics
· Grain Length: It has a distinct long, slender profile ranging between 5.8 mm and 6.2 mm.
· Texture: Possesses intermediate amylose content, which ensures the rice cooks up soft, fluffy, and completely non-sticky.
· Aroma & Taste: It is a non-aromatic variety with a mild, natural flavor rather than the intense fragrance of Basmati.
· Milling Strength: Highly favored by millers for its excellent head rice recovery rate, meaning the grains resist breaking during processing.
Primary Product Forms
IR 64 is commercially processed and traded in two dominant formats:
· IR 64 Raw (White) Rice: The grain is milled and polished directly after harvesting. It features a bright white appearance and a light, airy texture when boiled.
· IR 64 Parboiled (Sella) Rice: The paddy undergoes a hydrothermal steaming and drying process before milling. This drives nutrients from the hull into the grain, giving it a yellowish/creamy tint, a tougher exterior that resists overcooking, and an improved nutritional profile.
